What is a truffle?

The truffle is a subterranean fungus that thrives on a symbiosis with the roots of trees, especially Holm Oaks and White Oaks.

With its round shape and gnarled black exterior, and its white veins on the inside, the Tuber Melanosporum is one of the rarest and most sought-after of delicacies. Its size and shape have no bearing on the quality. You can tell a good truffle essentially through its subtle aroma and the firmness of its delicately marbled black-brown flesh. Truffle hunting takes place from mid-November to early March. Truffles reach full maturity in January.
