Fresh truffles
A fresh, delicate produce, truffles lose flavour and weight (moisture) on a daily basis. Fresh truffles should be eaten quickly in order to enjoy their flavour to the full.
Advice on storing
If you wish to eat your truffle while it is fresh, in the days following your purchase: brush, wash and dry it before storing it on a sheet of absorbent paper in a sealed container in the refrigerator.
To keep it for around 12 days
Brush, wash and dry your truffle and then immerse it totally in oil in a container before putting it in the refrigerator. The oil will then become infused with the flavour and may be used in food preparation.
To keep for longer
A truffle can be kept frozen for a year, so it can be enjoyed at any time of the year. Once brushed, washed and dried meticulously, place the truffle in the freezer, either in cling film or a vacuum pack.
Our preserving jars
Our jars of whole truffles, pieces and juice will keep for three years. Once opened, you are advised to consume the contents within 48 hours, in order to preserve the aromas.
